Manage all operations associated with the kitchen, ensuring the consistent production of the active menu(s) and maintaining the standards of quality, presentation, and timely delivery that patrons of The Fishmarket expect.

Devise, plan and price menus; maintain an efficient and reliable supply chain; count, value and re-stock inventory and monitor real food costs; maintain digital records and balance accounts; create and monitor a regular kitchen cleaning program; ensure the equipment maintenance programs are performed correctly, to ensure equipment down time is kept to a minimum.



  • Select and induct kitchen personnel as required, maintaining appropriate labor cost percentages.

  • Conduct training in new concepts and menus for appropriate kitchen personnel outside the service.

  • Plan seasonal menus, including frequent specials and event specific menus.

  • Determine accurate food costs through regular and thorough management of inventory.

  • Ensure un-supervised kitchen staff maintain a consistent work ethic & standard of production

  • Regularly liaise with floor staff and customers to ensure service standards are being upheld

  • Modify work procedures or processes to meet deadlines

  • Schedule employee work hours

  • Direct and coordinate activities of workers or staff

  • Maintain a positive and professional relationship with other members of the service team.

  • Plan orders of and requisition equipment or ingredients according to identified shortages

  • Monthly management meetings will be held to set goals and discuss upcoming events, also to discuss staff and procedural appraisals. You must ensure these goals are met and suggested changes are enacted and evaluated sufficiently.

  • Maintain a clean & safe working environment.

  • Monitor worker performance and maintain production & work records

  • Inspect facilities or equipment for regulatory compliance

  • Requisition and maintain stock, materials, supplies or equipment

  • Supervise and coordinate activities of cooks and workers engaged in food preparation.

  • Meet with sales representatives/suppliers in order to negotiate prices and order supplies.

  • Check the quantity and quality of received products.

  • Estimate amounts and costs of required supplies, such as food and ingredients.

  • Coordinate planning, budgeting, and purchasing for all the food operations at the restaurant.

  • Monitor and maintain sanitation practices to ensure that employees follow and meet required standards.

  • Demonstrate new cooking techniques and equipment to staff.

  • Attend all scheduled meetings.
